Mr. Dave Cathey is Food Editor of The Oklahoman, Look at OKC and He writes the Food Dude column, is host of “Open Flame” at American Propane and the author of “The Culinary History of Pittsburg County: Lamb Fries, Little Italy and Choctaw Beer.” His work has also been featured in Food Network Magazine and Saveur.

Chef Marc Dunham is currently the owner of the Dunham Hospitality Group. Prior to this, Marc was the Director of Culinary Arts at Francis Tuttle Technology Center for 5 years and the Director of Food and Beverage at the Atherton Hotel and Rancher’s Club.  He has a strong and diverse culinary background that allows him to show great versatility. With a beginning at the age of 12, Marc has worked in restaurants his entire life and worked in every capacity of a restaurant.  From washing dishes to becoming an operating partner at Iguana Grill on Automobile Alley, Marc grew up in the business.

In addition to business, Marc is dedicated to community service and philanthropy.  He regularly gives his time and services to help with organizations such as the American Red Cross and MS Society of Oklahoma.

Marc completed an A.O.S from the Culinary Institute of America and a B.S. degree in Nutrition and Foods from Texas State University, and has worked and cooked in a variety of kitchens from New York at the Michelin starred Picholine, La Grenouille, and Lespinasse to Austin at Asti Trattoria and Granite Café.

Marc’s hard work and talent led him to the James Beard House on July 15th, 2010 where he was the featured chef. Marc believes in utilizing local and seasonal products and precise techniques to create food that is delicious, bold, and unique.  In addition to his expertise in the kitchen, Marc has a strong business, marketing, and financial acumen.  He has used his skills to turn around struggling businesses, design and create award winning culinary programs and start his own businesses including JT’s Tacos.

Chef Kurt Fleischfresser is an award-winning chef and creator of many of Oklahoma’s finest dining establishments. Kurt is also known as one of the best culinary educators, training many outstanding Oklahoma chefs.
